Thinking back that far, what did you really hate?

With me it was the smell of cabbage cooking, and tapiaca.

Used to make me retch (not wretch).

Everything about them. Most of all, I suppose, fish pie, anything with
milk in it and cabbage.

It now turns out I am allergic to fish, lactose intolerant and am a
super taster.

One teacher stood over me, swishing his cane to make me eat fish pie. I
puked up all over him and collapsed.

For me it was mashed potato. Always tasted like paraffin has got into
it. This was further reinforced by having to sit opposite Kevin who was
an open mouth eater. Like else thread I was forced to eat once (everyone
being kept in until I'd eaten enough). Then I upchucked all over the table.

At the time, dinner money was five shillings a week. I found I could get
6d of chips and a 5½d fruit pie to eat at home. Making me a sweetie
profit of 2½d a week. I got a good telling off when mum found out I was
coming home for lunch. I was only 6 years old at the time.

School dinners at Brentwood were never enough (just post-war, and
schools had no leverage to get better deals than rationing offered~)

At Wanstead I can't unforget anthing UAB. It was a big school for the
time (740-or so) and suppliers wooden want to lose such an account.

So, the only thing I would have hated was eggs, which still disgust me.

Varieties of frogspawn. Tapioca, semolina ... also halfcooked lumpy
mashed spuds.

OTOH, I still like butter beans.

The frogspawn desert. But even more, carrots the size and texture of a
half Lego brick. Later I did get really to enjoy carrots both raw and
cooked, so happily there was no permanent damage.

Haven't eaten that frogspawn in more than 60 years!

Perhaps we were lucky but I enjoyed everything, frogspawn included. But it
wasn't always that way because, you see, I loathed rice pudding from the
very beginning. And when I say the very beginning, I mean since before I
had ever even tasted it.

My parents tried every trick. They even reasoned with me: "You can't know
you don't like it if you've never tried it." But I knew, I knew.

Then I started school and school dinners and we had to eat everything we
were given (starving children in Africa, and all that) and one day, inevitably,
there was rice pudding and I forced myself to put a spoonful in my mouth
and screwed up my eyes and...

It was rather nice, actually.

I didn't really hate it, just rather despised it as a pale (well, a
darker shade of pale, really) imitation, was the 'gravy', which was
prolly some relative of 'Ugh! Bisto!'.

At home, gravy was close to a treat: most of the accrued fat from a
roast was poured-off into a basin to set into dripping* and plain flour
was worked into the remainder, then a roux was made using vegetable
water and if necessary, an Oxo Cube (*depending on how well-cooked the
On!ons were, and of course, the meat juices,). The joint was always
surrounded with On!ons, and often with halved peeled potatoes, parsnips &c.

Sometimes a dash of leftover red wine was thrown in which improved it
no-end, (but there was seldom any left over)

* Dripping from the roast: a treat in itself, spread liberally on fresh
(real) bread, especially if there was delicious dark jelly under it in
the basin.

Mmm - bread and dripping - a firm flavourite in my yoof.

The only thing I couldn't bring myself to try was tripe. Dad had a plate of
tripe and onions cooked in milk occasionally, and the appearance put me
off. I'd have no problems trying it these days but you don't see it now.

I would suggest a) that you do see it now but you just have to know
where to look and b) you probably will have the same problems trying
it today as at any other time.

They used to (and probably still do) sell loads of it on a Sunday
afternoon in Ciudad Bolivar, Venezuela. But they don't call it tripe.

I had just spent an -erme- interesting three hours watching the
phenomenon that was Aló Presidente on the television in my hotel room.
Which channel? All of them: it was a cadena nacional so all the
stations were obliged to stream El Presidente for as long as he chose
to continue broadcasting and the show would go on and on until it
suddenly and abruptly ended when he became bored.

I decided to go out for lunch. The streets were deserted - mad dogs
and Englishmen and all that - but a few cafes were open and they all
offered the same Sunday lunch menu: Sopa de Mondongo. I didn't know
what that was and neither did my little pocket dictionary but -hey- I
was in Ciudad Bolivar, on the banks of the Orinoco; I had just
survived several crazy days in Caracas and here I was and I felt
lucky.

I chose a nice cafe and ordered. My soup and bread arrived and I tried
some of the liquor and it was delicious. There appeared to be a little
piece of chicken skin near the surface and then I realised that the
whole bowl was made up of little pieces and they weren't chicken skin.
I might have been able to swallow chicken skin without retching but
not this. It wasn't the taste or the smell, it was the slipperiness
and the sliminess I couldn't stand so my Sunday lunch became just
consomme and bread - I just couldn't face the rest.

When I tell that tale to people in Latin America there's always
someone who comes up to me and says "My sister/mother/granny/aunt
makes a wonderful mondongo - you must try it." And I notice that it is
never the speaker who makes that claim about themselves. I wonder why?

Nick

A good thing TAAAW

While in hospital in 1966 (having piled-up the Vin & almost killed
myself into the bargain), the cooks (chefs, I goove they called
themselves) were, to their credit, trying to present a 'more
interesting' menu. A sort of grey thin custardy stuff with pale cubes
and chopped On!ons in it was offered one day. I put one of those cubes
into my mouth and the feel of it, the disgusting flavour of it made me
retch immeejitly. Tripe and On!ons was never presented again.

One old Lodnol tacksydriver - "Lovely <gomph><grunt><belch><slurp> !"
shovelled the stuff in with relish and evident enthusiasm, so I guess it
was intended to taste like something between penc and chxr and look like
the exudation of a serious wasting/rotting disease with lumps in.

That tacksidrivel was the only person in the quite large ward to eat
*any* of the stuff. No choice then - take it or leave it, not like my
recent experiences of mutlipull choices of almost as <Malcolm
Muggeridge> abso-lute-leagh ghawst-leaugh </Malcolm Muggeridge> "food"

(snip rest of story)

What a load of tripe.

Our uncle was the only person in our household[1] who ate tripe.
Mom would cook it for him and we would all leave the room.

[1] He had his own flat, but ate most meals with us.

My mother used to cook tripe and lights, every Saturday, for the cats.
Used to stink the house out. OTOH the cats seem to like it, the use to
keep on rubbing her legs until their first serving was ready to eat.

Ah! A competitor for okra and gumbo. Probably never a problematic
repast for British fpubbyoblf and not, happily, for those in HM
Leftpondia or northern US Leftpondia. Alas, my mother was from the
South and liked okra. Anything made with okra has the repulsive
mouthfeel recounted by Nick with a flavor (if you can avoid retching
long enough to register it) just as bad. It always brings to mind the
old joke about the guy who made a bet, promising to drink from the
saloon spittoon if he lost.

What I can tolerate is bluelegs cooked au tripe - i.e., first pick your
bluelegses - Lepista saeva - found from October-ish through to the first
hard frost and slice them into thick chunks.

Fry the chunks lightly in butter with chopped On!ons and a little garlic
and black pepper, drain in a strainer (not strain in a drainer) and roll
On!ions and bluelegs chunks in plain flour. Bring a pan of milk to the
boil and tip the bits in, stirring con furioso.

Simmer for Arthur Nower.

You really, really can't mistake bluelegs for anything else, AKA blue
stalks or blewits, they have a pleasant mealy sweet scent, light tan
caps, pale cream gills and - you've guessed it, blue stipes.

You can use the same recipe for other fleshy mushrooms, especially the
St. George's Mushroom, (Tricholoma gambosum) which you may find in grass
at this time of year. This is a versatile mushroom, for nobody is quite
sure which genus it belongs in... Calocybe, Tricholoma, or even Lepista.
This can, however be mistakenly identified: there are at least two
poisonous and one other edible one with which it might be confused by
the beginner in fungoid foraging.

Strongly disagree. I havee eaten okra, and tried to eat tripe. They are
not in the same class. IMO.

I wonder if tripe-eating is something that you'd have to be groomed
into as a child ?

Molishes sense. My dad was the son of a pork butcher and was brought up on
offal. I like most offal, tripe being the exception.

Which caused me to contemplate the term "tripe-hound" - for which the
Collins on-line dictionary sayeth:

1. an objectionable person
2. a newspaper journalist
3. (Australian and New Zealand) a dog

Elsewhere it's said that, in WW I, it was a nickname for the Fokker
triplane.
