The main "safe to drink" thing with small beer was the way the water was
heated to above the lethal temperature for most bugs and diseases during
the brewing process. The incohol then kept it sterile (ish). We've all
had bad beer....

The point of small beer was that it was safe to drink, the wort having
been boiled.

No idea whether the alcohol had any effect on dem der worms, germs.

firing the cannons. (not firing the church canons) of old.

Well, since I can't stand unaided the agency carers could either spend
an hour or so of their twenty minuets getting me into my wheelchair,
watching me clear-up the débris and then spending another hour or so
getting me back into/onto my bed again...

Grapes, maybe. I thought the problem was the water ? I also think they
don't make it with the rainwater that falls onto the vines ? What am I
missing ?

For good wine, the only ingredients are grape juice and yeast, and in a
lot of cases, the yeast is a wild yeast which grows on the skins. For
red wine, you leave the skins in contact with the juice until the colour
has transferred. As the juice is sealed inside the skins until pressed,
it is sterile(ish).

Beer has water, malt, yeast and hops in it, so needs to be boiled to
extract the malt and sugars from the sprouted barley, which has the side
effect of sterilising the product.

Yes. I jbexed the vendange for a couple of years; they made a Muscat (de
Rivesaltes) that went up to 21 without any added suger. I remarked that
I hadn't realised yeast could go that strong, and asked where they got
it, and that was the answer.
