Pale reddish dust in the bowls.
A 60 degree hour in the ultrasonic didn't clear the main jet holders.
That's dull, they're soaking in paraffin over night then.

Someone seems to have been a bit over excited on the exhaust,
the flanges are not exactly 'flat'. How hot does stainless need
to be to bend them a bit the right way?

Since it is stainless, I can't see you are going to do them any harm by
heating to dull red heat?
But it really depends on how thick the flanges are and how much bending
is involved? A photo would be useful.
I appreciate that the risk of causing a split is greater with stainless
than mild steel.
A real metallurgist will probably be along shortly.

Yeh, I suspect so, since the fuel pump and filter are absent, I think
some previous idiot connected the tank directly to the carb.

I've got a load of in line filters for when I connect anything back up.

Generic stuff of that website everyone uses, but it may be that if I
trust a bike forum, the biggest bit of brass in the carbs doesn't
actually HAVE a hole all the way through, carbs are magic.
I've stuck them back together and will see if they WORK at the weekend.
The exhaust needs to go back on before I start it.

Not sure if gravity can do what the pump was intended to do. And inline
filters may clog up more quickly than the carbs, so I would have looked
into if the fuel tank can be 'cleaned out' and re-sealed, somehow.

I've done that to two rusty steel tanks myself. Sodium hydroxide,
"Spirits of salt" and phosphoric acid can work wonders, but also damage
your health and environment if not handled carefylly/responsively.
