Mac is still on Mojave here, and won't update the iPhone (using iTunes)
without upgrading MacOS, which I don't want to do.

Is it okay to update the iPhone through WiFi? Will it still work with Mojave?

wifi is the most common way and should work with the latest itunes,
separate or integrated.

The next time you plug in to your Mojave Mac it'll say you need to
download an updated component for iTunes to talk to your 14.5 phone.
Those updated components work all the way back to iTunes in 10.11...
