Why are Super Over runs not credited to batters in records?

Is it because of the complications in maintaining the score cards of
batters being out twice in the same match or other reasons.

Probably because it's effectively a separate one-over match used as a
tie-breaker, rather than part of the main 20- or 50-over match.

It's much the same reason as why penalties scored in a penalty shoot-out
don't count towards footballers' goal tallies.

If the Super Over was an extension of the original match, so that each
team continued from where they finished their original innings, with the
two batters who were not out (unless the team was bowled out), that
would be a different matter.

Speaking of penalties, how the fuck did Kane miss that penalty stroke vs
France?

It was gross to completely miss the goal post.

One can live with it IF the goal keeper stopped it but it went over.
