I'm ripping some old DVDs, so I can get rid of the disks. I can't recall
what software I used back in the day, but I've found I can rip using
VLC. The question is:

I am presented with a bewildering array of output formats. Which one do
I choose?

similar still around? Very fast, very convenient and was able to
circumvent copy protection schemes.

That's a container format, so among the least interesting of the
things to choose. But yes MP4 is pretty universal now so it's a
good choice for that.

For the video most popular is h264, and now audio tends to come in
AAC more often than MP3 but it doesn't make much difference.
Bitrates are a matter of preference, but probably around 1000kb/s
for video at original DVD resolution and 96kb/s per channel for
audio (so 192kb/s for stereo) with MP3.

That said, I'd use AVI container, MPEG4 @500kb/s, and MP3 audio
@192kb/s, because I want things playable on old software and I'm
not fussed about video quality. I scarcely ever rip DVDs anyway -
dealing with masses of video data is more hassle than it's worth
and I like picking them from a shelf.

Speed will of course correspond to the quality/size trade-off with
the recompression of the video data, so it depends on the settings
you use and how appropriate they are for your computer.

VLC should be able to do that too, using libdvdcss:

One snag is that the brute-force cracking of the encryption key can
take a long time, during which it might look like the software has
hung because it's working but not spitting out any video data.

I know what you mean. I find new songs that are only in digital format,
so grab them with youtube-dl then burn them to a CD, so I can play it in
the car.

My car is very old but it does have a radio and a cigarette lighter.
I have one of those gadgets which plugs into the lighter socket and
pairs with a mobile phone. The radio is then tuned to the gadget's
frequency.
The results are scratchy & variable.
Is there a top-quality one?

The location might be a problem - try mounting it closer to the
aerial. I'm not sure whether cigarette lighter extension cords are
easily available though.
