I think I know the answer but thought I would check with the gurus.

When I move my domain from Heart (which is down again) to Mythic Beasts
presumably all of my existing email will stay on Heart's servers and be
lost?

If so I'd better get on with pruning it and archiving the balance it
locally.

I can't log on to my control panel. Captcha is asking me to identify
crosswalks which I've never heard of then it switched to traffic lights, I
used to be a cyclist, what's a traffic light?

Short answer: Yes.

Long answer: it’d be possible in principle for them to continue to
provide access to it even without them hosting the domain as such.
However they may not be set up internally to do this and you probably
don’t want to explore the question given their availability issues
anyway.

Personally I prefer my archived mail to be kept on a mail server (so I
can access it in the normal way for email) with adequate backups.

So do I but I will have to move it locally then move it to the new
provider I think.

Even longer answer: it's possible to keep the domain registration at Heart
and just switch the DNS over to point at Mythic Beasts. You can likely add
the domain to the existing M-B hosting account and change the DNS in the
Heart control panel. Then you can likely still access the email at the old
server (assuming it's mail.heart.whatever rather than mail.yourdomain.com)
just you can't receive or send email from them.

(technically send will still work, just the SPF will be wrong so the mail
will likely be rejected as spam)

When you have pulled everything off that you want, transfer the domain to
M-B and set it to use M-B's DNS (they have a dropdown of choices, so
pick the right one for your hosting account). Then cancel Heart.

It is pesky the way ISPs (including M-B) charge for disc space much more
than it actually costs them. At M-B on the low tiers it's about £3-6 per GB
per annum, which is a bit much considering what SSDs cost these days.
(even with a ton of duplication)
