That’s impressive, particularly since they seem to have captured (or
overdubbed?) the cab sounds except for the staff talking. I wasn’t really
sure if the engine sounds corresponded to what the driver was doing with
the controls.

As far as I can tell, the cab sounds are authentic. There are brief changes
in the sound quality which I presume are switching to a mike in the rear cab
when anyone speaks. I wish I could understand what it is that railway
companies regard as so secret about drivers' conversations that you can
never hear them nowadays. Listening to the driver and second-man having a
good chinwag about any subject under the sun is part of an entertaining cab
video from the past. All it needs is to ask them "are you happy to have your
voices recorded?". Some rail companies insist that the mike is permanently
turned off; others allow it to be turned on but muted or switched to the
other cab during speech. What state secrets might be revealed if we heard
their voices? It will probably be a bland, wishy-washy reason like
"confidentiality" or "GDPR" which tells you nothing. At least most cab
videos haven't got to the stage that I saw in one (*): every time a train
passed a station, the video went blurry to avoid showing the faces of anyone
on the platform. FFS, why should anyone in a public place (a station) expect
privacy. It's not as if it's their back garden where I'm all for total
privacy.

(*) I think it was the Fawley-Southampton goods line on a day it was open to
the public.

The drivers might not wish to partake if their conversations are recorded
forever on YouTube. Given how anyone takes offence about anything I can
understand that viewpoint.

Could it simply be that the drivers were inaudible, as they weren't miked up? The mikes might have been placed in the
engine room and facing forward on the console, but not close to the three guys in the cab.

We heard them for a few seconds before the train set off from St Pancras -
either the driver or the second-man said something like "right, let's get
the show on the road".

I hadn't realised that an HST cab has a third seat, behind the second-man,
on the opposite side to the internal door.

It's not a seat as such, it's the bottom of what was originally a cupboard
and is now a recess, for hanging coats in. It's an unpadded, very upright
seating position with restricted shoulder room for those of larger build.
Some 'third persons' prefer to sit on the cabinet underneath the side
window on the non-driver's side, facing backwards.

Was it explained why there were three people in the cab? On gWr's HST
'railtour' there was a driver, a driver manager, and two 'VIPs' (usually
from gWr management) in the cab for each leg (the VIPs changing over at
each stop). However the three in the EMR cab appear to all be wearing
uniform, ie all just drivers.
