What are the consequences of not paying strata levies? Is it treated
like a normal debt which they will eventually take you to court over?
Is there a chance you could be evicted from your unit?

Only if the unit was sold to pay the debt could you be evicted.

Or the Strata will not sign off on the transfer until paid, with
interest, if sold. Debt collector is the usual practice, plus
interest.

Otherwise you could keep using the unit forever and never pay a cent.
