I've been getting some crashed/sudden reboots lately. Where are the main
ports of call to find relevant logs to investigate the cause?

Also any tips to what type of thing might be the cause? AFAIA I've not
changed anything, hardware or software.

M1 MBP Big Sur

Bah! They appear to be binary files. I think you can use Console app to view
them (left side menu).

I've found a few "ResetCounter" entries in Diagnostic Reports which
coincide with crashes and look like this, but that's it.

I don’t go there myself but you could seek help from the gurus on the Apple
Support Communities.

yet to be approved.
