Is there a way of tweaking an app so that it doesn't appear in the dock, even
when it's running? There used to be a way to fix this, but I can't remember
what it was, or even if it still works under a 64-bit OS.

the app has to offer that ability.

I have vague memories of an app called dockless but I’ve seen no mention of
it for years. I guess it is no longer supported and/or doesn’t work on
newer macOS versions.
