Canals aren't particularly wide, but they do need a steady depth, which
rivers just don't have unless they've had lock gates added (like parts of
the tidal Medway and Thames). Anywhere with moorings would need to be wider
so boats can still pass when others are moored.

I grew up near the Grand Union in the Lea valley - all the locks have
double gates, boats can pass each other everywhere and a boat and its butty
can fit beside each other in a lock. I now live near the Montgomery, some
of which is only one boat wide (there are passing places) and the locks
I've seen just had one gate. It's only 'in water' in short stretches these
days, having been carved up by road improvements. I posted some photos of a
