Looking through the online catalogues and all the images of motherboard
seem almost identical in they all basically have one PCI-X/E/? slot for a
fancy graphics card and no other slots.

Have basic PCI slots now gone the way of the dodo and I've just missed it?

As per subject, can any one point to a brnd and model?

I don't know about the ones you'll find "on the shelf", but there
are these specialist industrial motherboards:

The models starting with IMB seem to all/mostly have PCI slots,
along with PCIe and modern CPU/RAM support.
