Are there any aspects to a car that deteoriate simply due to age and not
kilometres travelled?

Will certain parts of a car, such as the engine, stop working after
20-30 years, even though the car has not been drive much in that time?

All the plastic bits, all the rubber bits, and that's just a start.
Think of all the vacuum hoses under the bonnet of a modern car.
