Is there still a large market for dedicated DSP ASICs or is that being
split into things like ARM chips and Nvidia chips now?

BITD you'd use an FPGA for low volume, mask-programmed gate arrays for
medium, and full-custom for high volume. FPGAs have mostly taken over
AFAICT. (I'm not a big FPGA guy myself.)
