They're cheating:

"LIGHTNING GEN 5

The latest and the fastest PCI-e data transfer solution can reach 128GB/s of
unidirectional transfer bandwidth of a x16 interface that has doubled
compared to its previous generation."

PCIe Gen 5 is 32Gbps per lane (aka 32GT/s). 16 lanes gives you 32*16 = 512
Gbps = 64Gbyte/s each way.

That doesn't get you to 128GByte/s, but if marketing add the TX and RX
bandwidth together they get to 128GB/s. You can't actually transfer
anything at 128GB/s (unlike, say, USB-C/Thunderbolt where you can decide to
have more TX bandwidth for displays by changing RX lanes to TX lanes).
