I can sign out, but my account and its password are still remembered.
How do I remove it?

Thank you for reading and hopefully answering soon. :)

For the most part since the Feedback Hub requires a MSFT account(MSA) that
same MSA has its own unique online profile tied/linked with a variety of
other MSFT services.
Your MSA online profile is at <https://account.microsoft.com/>
- uses the same username-email address/pw as the Feedback hub

At best you can
- remove/Uninstall the Feedback Hub in Windows 10
- close your MSA by accessing the link the profile(bottom of 'Your Info'
page, How to Close your Microsoft Account)

Caution: If that MSA is also your Windows 10 logon, you should think twice
and again multiple times before closing your account.
- Closing an MSA can only be done after all other related services.
- Closing an account occurs 60+ days after submitting the account closure
- Closing an account will remove access to all features associated with
that account(MSA online inbox at outlook.com, OneDrive, etc).

Lacking other information, more important than 'how do I remove my account
from the Feedback Hub'
=> You may not be ready just yet to do any of the above.

Finally, even with the above, there's no guarantee that if you close your
account that it will remove your MSA email address from the Feedback Hub
in Win10 which is just another feature/app linked to the MSA.

Word of advice - If you don't wish to see you email/MSA in the Feedback
hub, just uninstall the Feedback Hub, then you won't have to look at it.

For the avoidance of doubt: will it break _anything_ that _isn't_
remote, i. e. things on the _local_ computer? (The Windows 10 login, for
example, without which I presume the computer is just a noisy brick?)

I actually do like leaving feedbacks, but I just want to log out when
I'm not using it. I found out that I can log out from W10's Settings ->
Accounts -> "Email & accounts". Also, I use a local account in W10. I
only used my online MS account when needed like activation to save my
retail key to avoid reactivation process in the future.

The point was, your MSA(username/pw) is always remembered somewhere.
You asked a compound question 'and'
'My account *and* password are still remembered. How do I remove it'
i.e. it may require re-entry if prompted but it really is never removed
until an account is permanently closed.

Fyi..
Both Local and MSA on the same device support automatic activation since
the device remains digital licensed and stored on the MSFT server.

The exception is a hardware change(typically mobo or cpu) on the same device.
The Win10 for that device when digitally licensed in addition linked to
an MSA will provide another option for that logged on MSA profile(not
available in the Local account) to reactivate after a hardware change(like
noted above). That option, when needed is available as a Trouble Shooting
option providing selection of 'I changed hardware on **this device*
recently' with subsequent options to select the device, and select 'Activate'
