This is what Win-10 tells me this morning...

Windows update:
"Last checked: Today, 3:54 AM"

Gee, I unplugged the ethernet cable before going to bed last night. I
plugged it back in after 7 AM this morning.

So what did it check?

I forgot the term and can't check since I'm running my linux now but doesn't windows have a way to update via other pc's on the network? I
remember seeing this as a checkbox to turn on/off in settings.

Was the computer on? If so, it was just checking itself and matching it
to the latest updates, also gathered whenever you were online and
stored. If it was off, who knows?

What the response means, is one piece of software issued a
command to check, another layer told it to piss off, and it
retired with a smug look on its face.

It did "check", in the sense that it attempted to check.
The fact there was a network error, and that network error
is not printed on the screen, well... who is counting ? This
is a computer after all, and precision on computers is so 1990s.

This is also why we have the error "Something Happened". It
lends an air of mystery to life. Like if the brakes failed
on your car, you would want a Red LED on the dash labeled
"Something Happened". Maybe it's an Apple AirPlay failure
or a Brake Failure, who is counting ?

As for the communal sharing of files on a LAN, that is
DoSVC Delivery Optimization. BITS was the first downloader
for Windows. DoSVC is the follow up. Today, BITS is probably
not doing the WU downloads any more, and DoSVC is. This observation
is also important, if you're on metered Internet and you're
attempting to reduce data usage. It would be a sad situation,
if you wasted half the morning setting restrictions on BITS,
when it was DoSVC wasting the WAN bandwidth.

DoSVC can cache the files used on one machine, to do security
patches. Other machines can query the local machines, for copies.

While I tried to set this up, it never seems that I run the
same release on two machines at once, for this to actually
work out :-) Maybe some day I'll get to witness whizzy-fast
updating. But not so far.

If the OP pulls out the network cable, then neither WAN updates
are happening, nor are LAN-based updates happening. And Delivery
Optimization, as far as I know that's opt-in, and you have to
set it up.

With DoSVC, when a Windows Update in the room pulls a file, it
still checks the SHA256 signing. If the signing on a local file
is bad (say, ransomware overwrote it), the file will be rejected,
and a copy will be pulled from somewhere else.

My computer checks for updates when it is switched on at about 09:00.
Malwarebytes checks again at 14:00.

In the OP's case, if the computer is on overnight but off-line, the
update check is comparing the installed update version against the most
recent version that was recorded when last on-line. If the OP had looked
at the update history, it would have shown the same message in either case.
