I know it's been discussed so much here but I just downloaded it and found a 64G drive and tested it with about 8 ISOs.
One was Mint 21.1

Sorry to say that the only spare drive I had was a 2.0, but still, it works and I got the idea what it does. I booted
my Windows and downloaded the 22H2 ISOs for Win10/11 to add to it.

I want to thank all and any for the info. I may toss a few thumb drives now.

Keep the spares, you may want to put some kind of persistent live on one
or more.

Ventoy also has persistence, but I haven't mastered that part yet.
Currently I've been doing persistence either w/ mkusb via linux or a Win
tool Rufus. I use 'single' USBs for my persistent ones, currently a
Mint 20.1 and a Sparky KDE 6.6 I use for dl, hash check, and sig
authenticating linux .iso/s -- also writing them to a Ventoy stick.

I like KDE for that because the Kleopatra GUI for GnuPG key management
is native and the native Dolphin file manager has a sum checker feature,
plus I like to 'fool around' w/ KDE because its features are different
from Cinnamon's.

Sparky is supposed to have a make usb persistence feature, but I haven't
gotten that to work right yet.

I simply stuck in a blank 32G usb and Mint 21.1 bootable live usb and booted the Mint. Installed mint 21.1 right on
the 32g usb. It's a full stand alone system just like any hard drive. The only issue is that if you make your own
partition (recommended) with / and swap, the install wants to set the swap on the usb drive and the swap on the HD mint
in the fstab. You have to edit fstab and take one out before booting. (or I do at least).

I have a laptop and can't simply remove the HD (ssd) to do it 'right'.

why use ventoy or even a usb at all. boot iso's all day long from grub

Nice idea, complicated, but nice. Not portable though. I bookmarked it for the hell of it anyway.

how well would Win10 run from a 32Meg thumb drive?

There are instructions out there, but it can be
largely a waste of your time. I tried a few of these
experiments (not using this particular page of instructions),
and have nothing positive to report. I tried to boot
from a VHD once, and it went into a boot loop.

https://www.techspot.com/article/1751-windows-to-go/

What will work, is running it inside a virtual machine.
VirtualBox has USB Passthru, and that allows a virtual
machine to actually be useful. (The VirtualBox on Linux
is likely to work better than the version on Windows.
Recently, I've had guest OSes *crash* in Windows VirtualBox,
and memory test reveals there is nothing wrong with my DRAM.)

Ordinary TLC flash sticks, the kind you can find on a
hook at a big box store, those will die on you within
about a year of purchase. And are not especially good
choices for moderate amounts of random write activity.

There are some SD cards which have better wear life than
ordinary ones. But I haven't seen a USB flash stick lately with
that kind of flash in it. Micron calls this stuff Enterprise
Flash, and it has 6x the normal write life. If you do the
arithmetic, some of the products with extended write
life seem to have 32x the life rating (if you believe the
rating). An SSD drive on a USB cable might work.

Some of the devices intended for Chia Mining, can have
good ratings, but then again, those did not appear at
retail. No store owner wants to take a chance on
not selling those. So if you could get one, it would be
a special order and "no-returns" policy. You might get
12000 TBW with that, instead of 600TBW for "ordinary" devices.
And you don't want to buy those used, because if they've
been used for Chia, they've been beat to death.

I don't run Win10 from ventoy, just use it to load the iso for installation.
I did get some good usb3.1 high speed (or good at least) thumb drives that I loaded Linux on and they run a working
system pretty well. Obviously not as fast as internal drives. About 25% lag in speed at most.

Yeah, this seems the best use of Ventoy. I've tested it with Gpartd and
Tails and it works pretty well if using a hi-speed USB 3.x flash drive.
I did have some issues launching Gpartd in full GUI mode; fail-safe
works best.
