This is mainly for Char, but feel free to jump in.

Well, after about an hour searching for a version of Plex that would
run on Win 7, I finally got the server installed on my Win 7 computer
and the app on my Fire Stick. I got everything configured, but the
server would not add my library. Now, it won't even open on my
computer. I guess since I'm considered a troglodyte for running Win 7,
I guess I'll just have to keep using my trusty ol' USB stick! :-(

I missed a step during setup. It appears to be working now. :-) I am
still confused as to whether or not the "server" needs to be "open" on
the desktop. It appears to be installed, but when I click on it under
Program Files x86, nothing happens. I can open a browser window with
https://app.plex.tv/desktop/#!/ but there doesn't appear to be any
other icons for the program. Also, I have three items in the left hand
menu named "TV Shows". Why three? They all have the same content.

I was going to say that I think they officially only support Win 10 and newer,
so I'm glad you sort of have it working.

It needs to be running, but not necessarily open. Mine is set to start with
Windows, so it's always running. All you should see is the Plex icon, mixed in
with the other icons in the system tray or whatever that area of the taskbar is
called this week.

When Plex is running, you can right click on that icon and select 'Open Plex'.
That should open the program in your default web browser and from there you can
do everything.

My guess is that it's already running. Check for the icon in the systray.

Did you install the Plex Server or the Plex app? That looks like the Plex app. I
believe you need to have a server, and from there you can have any number of
apps (clients) that connect to it and stream from it.

Note that once you get the Server software installed, you can do everything from
there. In addition to all of the server functions, the Plex server can also act
as a full fledged client, so you can add content, watch movies, etc., right
there on the server. Once you have that working, you can begin to focus on the
Fire Stick app.

It's there, just hidden. Never thought to look there! :-(

Not sure it's going to work here. I live in a "retirement community"
and everything here is on WiFi. Usually have a pretty strong 2.4 & 5G
signal, but it can get flaky. Was watching a program on it last night
and it froze with a connection error. Went back to the football game
and it buffered a little, too, for a short time, but then worked fine
the rest of night. If it doesn't work, I can always go back to the USB
stick. Hasn't cost me a dime! :-)

There's a tech solution for that WiFi problem, as well, but I'm not here to
spend your money, so I'll wish you good luck.

Ran into a new problem last night. Opened an episode of Yellowstone
(mkv file with srt subs) and Plex told me the file had to be
converted. I agreed, but after a couple minutes, it said that
conversion had failed. What format does Plex use? I thought it would
run mkv files. Is it the subs that are messing it up?
