That's basically the only way I like red meat. Of course, hence why
I've never bought a Rib-eye. Bottom round is expensive enough anymore.

I've always had either cheap or old knives, that I have to consistently
sharpen. Maybe I'll get one good one, some day... probably not.

A good knife or a good sharpener?

I have one that puts the knife into a
tiny vice and has a jig to maintain
a specific angle between the stone
and the knife's central plane.

There are 4 choices for angle:

19 23 27 31 (degrees). NB: Blade will
have a wedge 2 * this value if both
sides sharpened at the same angle.

Different sides can have different
angles; thus scissors possible.

After sharpening a knife, I usually
test it by seeing how it can shave
body hair.

(Don't worry; I keep my pants on.)

According to Wikipedia, vice = UK, vise = US.

I've always seen it here as 'vice'.

I have a free-to-me (shocker) not-so-good (also shocker) electric knife
sharpener that I use from time to time. I also have an old metal knife
honing steel rod.

I suspect the electric one does the
job much more consistently than
the freehand honer.

The honer, if not used properly,
can easily wreck and edge though/

Note that the photo shows someone using it
improperly though. The knife should NOT
be held by hand. It should be held securely
by the device in between the top &
bottom halves, using the red-capped
screw to tighten it in place.

The other screw of which you only see the end
is used to adjust for the knife thickness.

Also, you hold the unit in your other hand
with the knife blade away from yourself
and use your dominant hand to hold the
stone by the plastic piece and stroke
in such a manner as to NEVER PASS YOUR
FINGERS OR KNUCKLES IN FRONT OF THE BLADE.

The steel rods are for straightening edges, not for sharpening even
though it makes them seem sharper.

Even with a super sharp knife, raw beef can be a challenge.
Simple tip for you: Put that beef in the freezer just for a short while.
Not long enough to freeze, just long enough to firm it up a bit.
Much easier to slice very thin that way.

OR... if you do this often, maybe buy a small home version of
a circular blade slicer with various settings. A home version of a store
deli meat and cheese slicer.

When I make steak sandwiches, I just cook a whole steak or roast to
medium rare and enjoy some of that for dinner. The leftovers are cold
and easy to slice the next day for steak sandwiches.

Remember, I'm Gary. I also like frying up a couple of "Steakumms" to
make steak sandwiches. I like most everything, including all the
horrors that are involved in the manufacturing of "Steakumms."

My taste buds are part of my body and I always value their opinion about
food.

You need to toss that POS stainless steel knife in your tackle box and
use it to cut bait. For slicing raw meat buy a good carbon steel
chef's knife and a steel, learn how to use it. Sending out cutlery
for sharpening by grinding removes the best part of the blade and
changes the geometry, good cutlery never needs sharpening,
only requires honing and burnishing... compacting the metal at the
very edge makes it harder/tougher. If you pay someone to grind your
good knives you're an imbecile. Grinding generates heat that removes
the steel's temper, end up with dead soft steel that is totally
worthless other than for cutting bait. If you need to alter a blade's
geometry learn to use a machinists file for draw filing. Never ever
grind cutlery, not even wet grinding.
There are too many people who buy bench grinders and set themslves up
in a knife sharpening business, all they do is ruin good cutlery, they
can't sharpen a lawnmower blade. I sharpen my lawn mower blades all
the time, with a machinist's file.

I'm a big fan of the honing rod. I bought a set of Henckels before 1990.
I use the 8" chef's knife every day and hone it after every use. It has
never been sharpened and has a razor's edge. The same applies to the
rest of the set except the paring knives.
My wife didn't get the routine and dulled them before I corrected her
misguidance. Now, when she uses the knives, she leaves them out for me
to hone. She's a good girl!
