Here are 3 recipes from Quebec including a venison tourtière.
I thought you would be able to get venison quite easily where you live.

Thankyou. I'll stick with pork ( still make your
tourtiere recipe)

We get wild deer in the garden :-(

Lots of wild venison available in the supermarkets and
butchers here, but I don't like the taste or texture of
the meat. John is a fan but only gets to eat it on
restaurant menus.

Funnily enough I thought of you when cooking on
Sunday. I was thinking " Who else on rfc would either
cook this treat or eat it.. maybe Graham",

An old traditional recipe my mother used to make:

lambs liver, bacon and onions in gravy, served with
garlic mashed potatoes and cabbage.

We never used to, but they seem to be a permanent feature, now. We never
had tick problems, until the deer invasion.

I use minced venison for lasagna.

Funnily enough, I was looking at veal liver in the S/M the other day but
as I was due for blood tests prior to my annual physical, I passed:-)
Next week I'll get some after I return from my trip to see the twins.

Even better, save up to buy some maple sugar and make Emeril Lagasse's
tarte au sucre. I once made it using a bag of maple sugar someone had
given my wife. It was incredible. I went to our local maple farm and at
that time, more than 20 years ago, it was going to cost $14 for the sugar.

But it's once per year so it hardly breaks the bank.

I have lost my sweet tooth :-)

It began when John was diagnosed with T2 diabetes a year
or so ago; he was determined to reverse it by diet and
excercise alone, and succeeded. While we were being
religiously evangelical about diet we just got completely
out of the habit of cakes, puddings, chocolate etc, and
haven't got back into it.

Must be a long distance relationship.
