What a waste of packaging, when the sauce could simply be bottled
without introducing tons of throw-away plastic into the environment.

It is actually cheaper per ounce than any other size.
It needs no refrigeration. 50 fl. oz. costs $14.39. I
used to buy the half gallons, which are 64 fl. oz. for
$39.95. Would you rather pay 29 cents per ounce,
or 62 cents per ounce?

I once emailed Liquid Smoke a request for samples due to a burn ban and I was a hiker.
They sent me case of asst glass bottles. I still have a couple.

Usually IS cheaper to make your own, assuming you are able to make it
just as tasty and willing to spend the time. Commercial brands are not
evil.

The idea of making your own Cholula/Tabasco/Frank's
or anything of the like is goofy.

I remember years ago, someone asked for a recipe to make your own
Diet Coke. Silly. Just buy some.

In my own experience, I like the "Jiffy Corn Bread." So darn cheap and
simple to buy a box and enjoy it. Why make cornbread from scratch just
to try to match that recipe?

There's no such thing as "Jiffy Corn Bread."
Jiffy is corn *muffin* mix. It is sweet. Sure,
folks usually put a little sugar in cornbread,
but not like in muffins.

Perhaps because some of us don't want to "match" the Jiffy Corn Bread"
mix. If that is what we wanted to do we would just buy a box of it.
You like it, no biggie.

I've heard that mixing that hot chinese oil with ketchup makes a spicy out-of-this-world seafood sauce.

we usually start with that and then Mom cuts it about half
with flour because it is too gritty for her. i don't have a
preference and will eat either version. normally use it for
making blueberry muffins.

Yes, but I commented on

I don't see any spiciness in Chinese oil or ketchup, unless "hot"
isn't referring to the temperature of the oil.

Remember the slogan "Better living through chemistry"?

Monocalcium phosphate is an inorganic compound with the chemical formula
Ca(H₂PO₄)₂. It is commonly found as the monohydrate, Ca(H₂PO₄)₂·H₂O.
Both salts are colourless solids. They are used mainly as superphosphate
fertilizers and are also popular leavening agents.

Tricalcium phosphate is a calcium salt of phosphoric acid with the
chemical formula Ca₃(PO₄)₂. It is also known as tribasic calcium
phosphate and bone phosphate of lime. It is a white solid of low
solubility. Most commercial samples of "tricalcium phosphate" are in
fact hydroxyapatite.

See, this is good for you:
What is mononitrate used for?
Isosorbide mononitrate is used to prevent angina (chest pain) caused by
coronary artery disease (heart disease). It does not work fast enough to
relieve the pain of an angina attack that has already started.
Isosorbide mononitrate belongs to the group of medicines called nitrates

The Hawaiians make their own hot sauce using small Hawaiian peppers and water called "chili pepper water." It's not a sauce but an infusion. It's mild with a bite. Anybody can make chili pepper water. All you need is intensely hot peppers and water and salt. You can also add other stuff like vinegar and garlic. You don't need much peppers, just 3 or 5 or 6. You can add anything you want to it. I don't boil my chili pepper water. I just let it sit around and let time do the work.
This stuff goes good with beef stew and laulau.
