Tonight was Sophia's school Christmas play at a church a few blocks down
the hill from my house. I'm glad that I didn't drive, because when I
called my mom when I got home, she was still trying to get out of the
parking lot. Still, BRR, it's cold out!

We just got home about 20 minutes ago, so for a fast/late supper, it's
"left over casserole", in the oven for about 20 minutes, or until hot...
Scalloped potatoes au gratin > green beans > ham slices. I'd rather
have some of Joan's pressure cooker pot roast, but it is what it is, LOL.

Pan-fried catfish fillets, with baked (from frozen) hush puppies and
steamed broccoli.

Not yet, but it's coming soon. I probably wouldn't have walked home up
a steep hill if there was snow/ice about. It was in the low 30's after
the sun set.

Sounds good! I've never been a fan of hush puppies, but I've only had
fried long-john silver ones. Ugh, so greasy and dense.

That's how they are supposed to be. A sort of a fucked up greasy
cornbread rolled into a dense ball and deep fried to obtain more
greasiness.

I have seen and heard a number of reports about obesity in poor
neighbourhoods and attributing it to the price and availability of food
in poor neighbourhoods. I guess the reason for the types of stores in
those neighbourhoods is that no one wants to invest a lot of money in an
area where there will be a lot of theft. Those little stores tend to be
expensive and that junk food is pretty expensive.

It was left over pressure cooker pot roast here and it was just as good
tonight as it was last night.

A good supermarket would go broke. Most in those areas shop at Dollar
Tree and the like, no fresh produce or meats. They do have some canned
good, fruit juices but I'd not try to make a really good dinner from
there.

Another factor is they don't have transportation to the better stores or
farm markets. Going back a few years in CT, they did have a small bus
to take people shopping. Not sure how it made out.

Properly prepared, hush puppies are not greasy or dense. I buy the
frozen ones because I don't deep fry (too much hassle storing and
straining oil). The frozen ones bake up nice and crispy outside but are
quite moist on the inside.

It's apparent Hank has never had good hushpuppies. The batter is not
greasy and if the frying oil is at the correct hot temperature they
brown very quickly and are not greasy.

That's pretty much what I said, Gary. The oil temperature is key. If
you try to fry anything in oil that isn't hot enough the result will be
greasy. The batter for hushpuppies is not greasy and if the oil is hot
the food will not absorb the grease/oil.

I've bought the frozen puppies a few times. They are fairly
decent, but don't have near enough grease to be authentic. They'd
likely be much better if deep fried instead of baked.
