Most have shrimp + BBQ pork, cilantro, purple basil,
betel/shiso/perilla (I don't know which), red leaf lettuce, bean
sprouts, tahini + peanut dip, and nuoc mam pha san (fish sauce
dip).

That's 96 ounces of 180% apple juice at a gravity of 1.145 waiting
for 4.5 grams of champagne yeast and Go-Ferm yeast rehydrant.

Oh, no. This is a new, bigger batch. I was testing the new yeast
rehydrant and dipotassium phosphate method on that last batch and
it worked very well. Very clean result.

Now it's time to start brewing bigger and stronger batches so I
can make more coherent posts.
