replaced it with shitty hydrogenated palm, corn, and soybean oils.

earth. Foodservice only. I think Callebaut still sells WC discos
you can find retail at high-end grocers. And bulk chunks for
shaving.

Almost all oils go rancid and/or polymerize (even worse to
ingest).

i used to find most of my bulk chocolate at the
bakery shops or places that had cake decorating
supplies. it's often cheaper and because it is
bigger chunks it's also fresher and keeps better
but it also depends upon how much volume the
place had. however it was fairly easy to spot
older chocolate as it would have more bloom or
white on it.

Callebaut was actual white chocolate sold in bulk chunks
when i was using it. not sure now since i've gotten away
from making chocolates in recent years.

it's regulations that you can't call something chocolate
if it doesn't have any chocolate liquor in it, chocolate
liquor usually does contain some percentage of cocoa butter.

It's RFC at work. 20 years ago the chocolate manufacturers
conspired to petition the USDA to change the Standard of Identity
for the amount of cocoa butter in "chocolate" to allow at least
partial use of other vegetable oils other than cocoa butter. Word
got out on social media (including RFC) and "The People" virtually
petitioned to, "My ASS! Fuuuuuck THAT!".

The People prevailed and the conspirators then removed ALL cocoa
butter from White chocolate instead, and called it something else.
Thus giving them a larger supply of cocoa butter for skin creams
and suntan lotions.

To date, White chocolate is still the superior chocolate product
in terms of the legally required cocoa butter content, but it
practically doesn't exist. The Conspirators found a way to fuck
us anyway by practically removing White chocolate from the market
and substituting some ersatz shit.

"Don't fuck with Big Business, or We'll Fuck You in Your Ass!",
was the message they were sending.
