It sounds like the usual BS. They're trying to be fru-fru.

For dinner tonight I'm going to pan-fry a couple of catfish fillets
dredged in seasoned flour, then an egg wash and seasoned cornmeal I
won't be cooking charred fennel or sorghum berries (whatever the heck
those are).

Had to look it up. It is a grain with a nutty flavor. Looks about the
size of peppercorns. Sells for about $3 pound.

For me it's a quasi Maurice Salad. I don't have most of the
ingredients, but I improvised as best I could.

It does. Fennel is not commonly used here. I seldom see it for sale and
it never occurs to be to buy some and cook it. I did have it once when
we were visiting friends in Golden CO. They sliced it up and sauteed it
along with slice onion. It was okay like that. I imagine the charred
stuff would be good.

The rule of thumb pricing is to add $5 for each adjective: Stone
Ground Charred Popped = $20. Making the reasonable price about
$12.

Popped sorghum berries are small popcorn - It does not make an
elegant garnish. Stone ground grits are just cheaper cornmeal
mush. Fennel produces estrogen which is not smart in a retirement
community. And triggerfish are well-known sources of ciguatera
fish poisoning, especially on the southeastern coastline.

Lemon Asparagus? The jury is still out on that one.
