It was the best ever. I used about a cup each of dried bread crumbs and
milk, one egg, half an medium onion diced very fine, some horse radish,
garlic powder, salt and pepper, about a tablespoon of ketchup. I
smeared a little ketchup on the inside of the baking pan and topped it
with some smokey BBQ sauce. It ..... delicious.
Serve with baked potato, steamed broccoli and salad.

I'm glad it turned out well! I've never really cared for ketchup on
meatloaf. I use bottled cocktail sauce which is basically ketchup that
includes horseradish and stir it into the meat mixture with all the
other ingredients.

I've actually been thinking about making meatloaf lately. It's gotten
colder here in SC (temps are supposed to dip down to 32°F tonight; I've
got the outside faucets dripping). Meatloaf with mashed potatoes and a
green veggie side would certainly hit the spot soon.

I'm doing leftover pizza and salmon portion with rice and a salad. Tomorrow the Pot Roast should fully defrost.

Do you make it in a loaf pan? I never tried it like that.

I form it and put it in the middle of a cast iron fry pan, then cut up
potatoes and put them around it. About 1 hour in 375 oven.

I don't use milk, but some sour cream. For onion, I have toasted dried
onions.

That's interesting except you left out an important detail - the hamburger.
I saw some horseradish root in the store. It was quite large. What the heck am I supposed to do with all that horseradish?

Maybe it can be fermented or rotted in a container under the
hot sun next summer. Yoose could call it horse-chi.

I've always used a loaf pan, but I'll have to try your method. All I
have to do is remember the next time. We have meatloaf maybe four times
a year.
I could make an exception while the memory is fresh. :)

I like to make my meatloaf in the shape of a chicken or Mokolii island. My meat shaping skill leaves a lot to be desired, I guess.
