Gingerbread

2-1/3 c. all purpose flour
1/3 c. sugar
1 c. molasses
3/4 c. hot water
1/2 c. vegetable shortening
1 egg
1 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground cinnamon
3/4 tsp. salt

Preaheat oven to 325F. Grease and flour a 9X9 baking pan. Beat all
ingredients in a large bowl using a hand mixer on low speed, scraping
bowl constantly, about 30 seconds. Beat on medium speed for 3 minutes.
Pour batter into pan. Bake about 50 minutes or until a toothpick
inserted in the center comes out clean. Allow to cool and cut into squares.

Serve with Honey-Ginger Fluff (optional):

In a chilled metal bowl whisk together until stiff 2 cups heavy whipping
cream with 1/4 cup honey, 1/2 tsp. ground ginger. Refrigerate at
least one hour.
