I've just done a quick check and in a pasta "bible" and the recipes that
came with the Emil Henry dish that I use, their Lasagne Bolognese each
include bechamel. I'll try to remember to post the recipe later as I'm
off now to a xmas eve dinner party.

I get that. I don't think I've ever had to double the recipe for red
sauce with meat lasagna. I did make a extra white (bechamel) sauce
based on his recommendation when I made his seafood lasagna recipe a few
years back.

I think the lines have got crossed! The "meat" in the seafood lasagne is
of course the sea food and the sauce is equivalent to the bechamel that
is part of a Lasagne Bolognese. When I make the latter, I double the
amount of bechamel as I have found that the specified amount is never
enough. I found the same shortage when I first made the seafood version.
Recipe for the LB will be posted when I have time in the next day or so.

Naturally, neither Jill nor I makes Lasagna Bolognese. We make
the American bastardization of it, which suits us just fine.

Mine is layers of pasta, Italian sausage, a smooth tomato _sugo_,
ricotta, and mozzarella.

I've never tasted goose. I'd like to try it but I've never seen it in
any of the stores. Then again, I'd not be willing to pay $80 to try it.
It's reputed to be very fatty. All the Christmas images (based
Dickensian novels and old movies) involve a nicely browned goose with
crisp skin from basting it with the goose fat drippings. It *sounds*
lovely. :)

The other sticky point is that I'm just not all that fond of lasagna.
I've had a variety of recipes, even probably with bechamel.

Pasta al Limone appeals much more. Alfredo (authentic, not that
crap from a jar). Puttanesca. Aglio e Olio. Sicilian pistachio
pesto.

It has never been a favourite of mine. I remember years ago going out
with friends for a lasagna dinner to a place that was famous for it.
Meh. It was okay, but there was no wow factor to it. Have made lasagna a
few times and have been served it at friends' houses and buffets. I will
eat it and enjoy it, but am unlikely to ever rave about it.

I bought a whole goose once. The butcher was surprised, because
normally only Germans bought his whole geese. I overcooked it with
chestnuts.

I tried cooking a goose one Christmas. It was absolutely
terrible. Dickensen has been on my shit list ever since.
Stick with a Norman Rockwell turkey.

Some years ago we had goose at a friend's house for Christmas dinner.
I'd not say it was terrible, but they never did it again. Nor would I
every try it. I'd rather have a chicken.

Is there a way to cook it correctly and it is actually good? When I was
young my best friend was German and his mother cooked goose at
Christmas. It was okay, but never as good as turkey. My former
neighbours cooked a goose a few times. It was about the same as my
friend's.

I am not going to even try to cook goose. I am already challenged with
duck. I swore off cooking duck again.
