I just started working on some eclairs to take to my brother's for
Easter dinner dessert. It's usually my wife's job to make the choux
pastry but for some reason she wanted me to do it. The flour has gone
into the hot water and melted butter mixture and the eggs have been
separated and are ready to be stirred in. The flour mixture has to cool
for 5 minutes before the eggs go in.

I don't know yet although I did take a roast out of the freezer,
but I've been busy doing other things. Maybe Monday as I have
other cooking plans for Sunday. But I did fry up breakfast sausage
this morning for coming breakfasts.

Update. There is something ominous happening here. It has been too easy.
The flour mixed in really easily with the hot water and butter and then
the egg and egg yolks blended in way easier than they have on other
occasions. Then the batter formed nice round piles when spooned out.
Everything is going way too easily. I am afraid that something is going
to go wrong.

My wife wants to me cut them open and stick them back into the oven to
dry. I don't know why. I know that wet insides can be a problem with
larger eclairs but these are more like cream puffs. I have helped her
with them dozens of times and they have never been wet. I would prefer
to just let them be and then slice them open later, after the pastry has
cooled and firmed because cutting them when they are hot has always
distorted the edges. My mother made eclairs regularly, always large
ones, and I only remember one time when a couple of them were a little
wet inside.

Nothing on my stovetop. Lunch was nachos; dinner will be a salad
with grilled chicken and a balsamic vinaigrette.

March 31 has been TVD since 2010. Nice that the President is
celebrating it with us.

It is an exciting day. We will celebrate the rebirth of Christ at
sunrise services. An important day for us to celebrate.

Later, my partner and I will go to an Easter egg hunt. The pastor of
our church has the hunt, first for the little kids, then the rest of us.
