We've been riding ebikes for quite a while now. Ours are step through
folding bikes. Hers is class 2 and mine is class 3+.

Gee Swill, you can peddle my bike without assist or you can dial up from Eco mode, Tour, Sport or Turbo.
For you I'd recommend the electric tricycle with a big padded seat.

No...on my bike I have to pedal to make it go. Hence, pedal assist.

choice for a beginner bike. Does it have a 250 watt motor? Single speed?

It's The Electra Townie GO 8D EQ Step Thru with the Bosch 250 watt Active Line mid motor.
Also has an 8 speed derailleur and features "flat foot technology". Even though I haven't ridden a bike in a year I could pedal up a steep street while sitting down. It'll do the trick for me.
Can't get anything too powerful. Bought the wife a new Electra Townie 7D last year and it has no motor.
She wouldn't like it if I left her in the dust.

Its not likely you will be riding on dusty unimproved roads. The literature
says you can ride to the beach; not on the beach.

Rails to trails routes. Lots in this province. They tend to be mostly fine gravel or grass/ dirt in more rural areas.
Local bike shop says it's fine for that kind of riding.

no snow no ice :-0

I wouldn't expect anything less for snowflakes.
There is a paved section right in the city here that runs out of town and transitions to the standard packed gravel.
We go by the motto...when the going gets tough, the tough get going.

You seem to be the one in need of a tricycle. Week legs, weak back, weak

Sounds like instead of the RAV4 Prime we bought yesterday, I should have
bought a Honda Fit, then maybe go up a size to a Ionic, then maybe an
Corvette, and then finally bought the RAV4 which seems to fit our and the
wife’s requirements. Might only cost me a hundred Grand extra.
