If you make a defamatory statement about person A when talking to person
B, then what you said is hearsay, therefore it would be inadmissible as
evidence.

Therefore in this situation you couldn't be sued for defamation.

That is not what is meant by hearsay. Person B cannot be called to give
evidence to support the idea that what you said about person A is true,
but they can give evidence that you said it. In the context of a
defamation action that is what is required.
