I need to get one for tests but there is a lot number of such devices offered on Aliexpress, so I need to know what sits inside to make the right choice.

Furuno has a 18 chapter course on the topic. They've been working the technology for 75 years and therefore know quite a bit about it.

I exactly need to know what sits inside of the ball, number of transmitters, if rotated or not, number of beams, resolution and more what is a standard in USG devices.

This week I plan to get $10 car parking ultrasonic device made of 4 outdoor sensors, small computer and small LED display for distance data and insert a single sensor into water to learn what response can I get.

I love history of development of fish sonars but what if offered at Aliexpress are modern stand-alone fish finder products
starting as low as at $20 (from the link above).

I still hope to get images of the broken fish finder opened (ball) and dismantled into pieces.

Tried hard to get such broken device locally but none offered yet.

Again, define "properly". You keep using undefined terms. BTW, I think you mean "schools", not "shoals" of fish.

How do you know which ones work "properly" and which don't, other than to buy them and test?

This seems to be a circular idea. First, know what is inside, so they can be bought, to see what is inside.

The distance meter and fish finder transducers are completely different. Speed of sound in water is a little less than 5x that in air, and of course water is much denser. It's usually just a rigid planar surface. The air transducer is more like a piezo speaker, and won't work very well submerged in water.
