The convention is to capitalize Polish, when referring to the
nationality and lower case polish, when making something shiny. That
works except for the first word of a sentence. Yes, there is Polish

Maybe. The area known as 'Autonomous Subcarpathian Ruthenia' is in the far western Ukraine, along the borders of Hungary and Slovakia. They speak a dialect of Russian called Rusyn and followed russian orthodox catholicism. In my grandfathers later years I took him to a church in connecticut a few times where the service was entirely in russian, and he knew and sang all the hymns in russian.
