"Fermented shark contains a large amount of ammonia and has a
strong smell, similar to that of many cleaning products. It is
often served in cubes on toothpicks. Those new to it may gag
involuntarily on the first attempt to eat it because of the high
ammonia content. First-timers are sometimes advised to pinch their
nose while taking the first bite, as the odor is much stronger than
the taste. It is often eaten with a shot of the local spirit, a
type of akvavit called brennivn."

After being buried in the ground to rot for three months, then hung
in the wind to mumify for three more, many of the restaurants that
server it have warning signs at the door.

"Chef Anthony Bourdain described fermented shark as "the single
worst, most disgusting and terrible tasting thing" he had ever
eaten."

"Chef Gordon Ramsay challenged James May to sample three
"delicacies" (Laotian snake whiskey, bull penis and fermented
shark) on The F Word; after eating fermented shark, Ramsay spat it
out, but May was able to keep his down."

"In his series Ainsley Eats the Streets, chef Ainsley Harriott was
unable to tolerate the heavy ammonia taste and described it as
"like chewing a urine-infested mattress.""

I've eaten it. Probably hugely overpriced at a restaurant in Iceland.
Fortunately, I had a shot of Brenvin to kill the taste. Icelandic gas
stations had it for sale in racks like beef jerky, suggesting it not
just a local oddesey.

Until we got used to it, a lot of us said the same thing about Army

So far as I can tell, there's a certain minority of locals who eat
it, either as a fashion statement or because, shudder, they
actually like it. But like the whale jerky[1], it's mostly for
tourists. Icelandic cuisine is a "thing" these days.

[1]Legal to take out of Iceland, but illegal to take into any other
country except maybe Japan. Supposed to be very high in energy
giving goodness, and is apparently popular among those who hike on
the glaciers.

FWIW, I once crossed swords with a Saundra Wallfesh. Found out later
that she was nationally ranked in epee. Unfortunately for her we were
fighting with sabers, and she just didn't have the mass for that.
She's the one who terrorized a group of wannabee muggers/rapists/we're
not sure what. Seems they mistook the wrapped-up item she was
carrying for a fishing rod--there were references to same according to
her. It wasn't. It was an antique rapier. And she managed to get it
out . . . Short slender unarmed girl they were ready to deal with.
D'Artagnan not so much.
