There is always going to be heat when you use an abrasive on steel. The
longer you grind in one spot the hotter it will get. A couple quick
passes on the sharpener will avoid that.

Those things will work to fix the edge on a blade that is just a little
dulled. Once in a while they need a proper sharpening.

Stropping realigns the edges of the knife giving it less resistance which
makes it more efficient and thus seems sharper.

Thank you. I don't know about you Dave, but I don't put my knife in the
sharpener and just leave it as Gary seems to be implying. Just a few
quick swipes between those perfectly positioned grinding stones and
my knife is like a razor.

If these ruined blades as Gary and Sheldon believe, they'd get horrible
reviews and nobody would be buying them and they'd be off the market.

I got one of these. It's a block with 4 diamond embedded sides in different grits. They're kind of a hassle to use but it's cheap enough.

Yet, there are at least two of us who own them and think they are great.
I have absolutely no regrets about buying one.

I bought my first one, an early model, in the 1980s. I now have two of
them - my original, and one of the newer, even better ones.

I've even managed to resuscitate knives which had been seriously abused,
resetting the blades and sharpening them to better than new.

My father taught me how to sharpen blades using traditional methods,
when I was a teenager. The electric sharpeners I now have, do as good a
job, much faster, and don't require the lessons I had - just follow the
simple directions that come with the gadget.

True. Seen it several times. There a lot of 'cooking aides' that only
1 of us have mentioned having.

Here's ones I have and use a lot, that some folks here rag on:

Rice maker with steamer top
Bread machine
Gas oven and stove top
Sandwich/waffle/pancake maker
3 crockpots, various sizes
Stovetop popcorn maker
Lots of cast iron: pans (4) and dutch ovens (3) plus some bakeware (3)

Things I don't have or barely use:
Blender, just a tiny Japanese one, 2 cups tops
Kitchen aide, don't have
Mixer, don't have
Food processor, don't have
Instapot, gave it away after 1 use
Pressure canner, don't have
Kitchen scales
