Monkey 125 or Trail 125.

Turby would just look like a twat on a Grom.

It's not about "having fun", which can be achievable on almost
anything, but being suitable to ride in a sporty fashion, i.e. fast.
Some great examples, albeit from a decade or two ago, include the
VFR750/800, the Triumps Sprint ST and the Ducati ST2/4. On an
enthusiatic ride-out with other people on full-on sports bikes, any of
those would be able to keep up (obviously rider-dependent) whereas the
ones you mention most certainly would not.

>It must come with hard panniers and be relatively nimble.

Relative to what though? I'd argue that it has to be relative to a
proper sports bike to deserve the name, just as its touring
capabilities need to be comparable with those of a full-on tourer.

>That leaves out
>all those sport bikes that leave you in pain after 2 hours in the saddle

Ahh, and here we see the problem. It's not the bike, it's you.

I can't see why not. 10k miles over how many days? I did a couple of thousand miles (Brno and back the scenic way) on a GSXR1000 in a week, and could happily have done more if the trip had been longer.

in what timescale?

many people ride 500+ miles a day on a GSXR1000

I think what we have to agree is that there is a cultural difference and
bikes considered "pipe & slippers" touring bikes in Europe are
considered to be more sporty in the USA.

over here, we consider the BMW R1250RT, Honda ST1300 and FJR1300 as full
on tourers, largely due to their bulk

for us, a sport tourer was spawned by the RS versions of the BMW boxer
engine, currently the R1250RS and the VF, then VFR 750 (Interceptor in
US).

This bit of nostalgia reminds me that Honda has finally introduced a
half decent sport touring bike, the NT1100
https://www.honda.co.uk/motorcycles/range/touring/nt1100/overview.html

It's built to compete in the 12,000 quid range so the Yamaha Tracer 900
and Kawasaki Ninja 1000.

The NT1100 might be right up your street if you are happy with 100hp

That is what we do anyway.
What is annoying is the long wait to "fill up" (I imagine)

24 years ago, I did 1642 miles in 24 hours on my ST1100. I could have
done it again the next day, as comfy as the bike was. After that, I did
a 4 Corners Tour (~10k miles) in 22 days. At the time, the ST11 was
almost sporty, but now seems really weak.

On this UK used bike site, 10 FJRs are called Sport-tourers, 7 tourers:

Nick Sanders did RTW on a Triumph Daytona 900, then a second one on an R1.

On one rare occasion I timed a full fill (XJ900F), walk to desk, walk
back, remount and go. - 8 mins.

Not timed a contactless one.

I fucked up once with 'estimating' time to get from Prague to
Gdynia- I didn't believe it would take the ten hours Google and
Garmin suggested.

Plus on the way I went past Kutna Hora and couldn't resist
stopping to look at the bones in the weird ossuary.

So I ended up with about 500 miles to do in 8 hours and this was
ten years ago when a lot of the main Polish roads were single
carriageway (Google now suggests it would take 9 hours).

I rode like a twat and did, I think, four fuel stops with the last
three taking around five minutes. Hard, fast, sustained miles
on the XT660 weren't good for me or the bike (a lot of bolts fell
out and a few days later the rear wheel bearing collapsed).

I got to the ferry port around the time the ferry was due to
leave and had to queue for a further twenty minutes to board.
Knackered so I paid for a cabin; €100. Ouch[1].

[1] A bit less ouch at around £1/€1.30 though.

Here's a list of a few other long distance riders, not a lot on sport
bikes, though:

My Daytona 1200 was setup and ridden in LD rallying. It was also used to
tour in the US, visiting most of the lower 48 States and half of Canada
during 4 years of ownership in my mid-50s.

I've never done that sort of distance, but yeah, sure, why not? Did a
few trips round and across France on a GSXR1000 (K3) sometimes up to
500miles a day, no problems, comfort-wise. I couldn't do it now,
having later broken most of my upper body coming off the same bike,
but that's exactly the point - it's not that a sports bike couldn't do
the job, and with suitable soft luggage[1] it certainly did, but that
I would no longer be physically able to do so.

[1] I recall one trip where Black Mike rolled up on his brand-new K4
gixxer, with luggage stacked up to his chest level on the tank and all
the way across the rear of the seat and the top of the panniers. Me
and Neal weren't much less loaded, eother, now I look at the pictures:

You asked if it could be done, not whether it was the most appropriate choice.
