I installed com.hg.SpeechTimer and turned off the "Confirmed exit."

It defaults to "Stopwatch".
I switched it to "Speech" & I changed the settings for "Speech" to
Green = 0:30, yellow = 3:30, red = 4:00 (I turned off blue).

It vibrates & plays a sound at each interval but does not stop counting.
It takes three presses to start it and multiple pressed to make it go away.
The three start presses are because you have to start it but it defaults to
the wrong settings. It should just go away when it's done.

It's a good app for what it is but it takes too many presses to do it.

Regarding the two com.hg.SpeechTimer & com.hg.SpeechTimer speech timers.

In both the timer apps you showed me I experienced the same problem that it
would wipe out all my hard work each time I started the app.

I finally figured out that you can't do what's intuitive, which is to change
the time displayed when you are ready to hit the START button.

You can change them and they will work that one time but they disappear when
you restart the app.

In both timer applications to make the changes stick you have to change them
in the settings which use a different method of setting the interval times.

Neither has a save button but both do save changes when you do it that way.
Both suffer from too many taps to start & too many taps to make it go away.

Otherwise they work well.

I missed the OP, so not sure what the problem is. I did a quick search
of the play store for
french press timer
and got a bunch of relevant apps. I took a quick look at the descriptions
of the first 3 and they all did as desired.

I didn't try to install any of them.

OT: When does GPP kick in? Since it's an actual Google thing, I'd expect
the same information on the server side to prevent stuff from even being
in the play store and showing up in search results.

Re the sound detection, I'd be highly disinclined to give a timer access
to the microphone.

Sure, and back in the mid-60s when I was getting my first serious
technical education we did such things as flip-flops and gates with
transistors and diodes so I could probably still do it without even
resorting to logic chips. Of course I'm a lazy sod so I do things the
easiest way I can think of. Or I find a way to avoid the task completely
which is even better. ;-)

I tried every single search and every single app that was suggested that
came up in a Google Play search for my phone and I installed all which
didn't have ads, didn't crash, and didn't flag a GPP warning.

I didn't have the kind of trouble I had with that app for any others.

Even when I search on the full name in Google Play from the phone the app
you suggested doesn't show up when I search for it from my phone.

It says it only has 100+ installs so maybe that's why it won't show up?
Or maybe because it doesn't have a rating is why it won't show up?

I've got a few timers working which do show up so I didn't spend more time
trying to get it to just download onto my phone for reasons unknown to me.

Your search worked better than my search as it found apps I didn't.

It says it downloads it and then asks me to hit the "Install" button for
apps that don't trigger the Google Play Protect warning.

For those which trigger the warning the "Install" button comes up with the
warning. It will allow me to install it but I never pressed the button.

If Google Play is going to trigger a warning, I would want to know that
BEFORE I bother to hit the button to get the app while I'm still on GP.

I can see getting a warning for a private VPN or something like that but
this is just a coffee timer. Why would three coffee timers flag a warning?

Agreed. My system is fully updated. Maybe I'm lucky it crashed.

Maybe you have an old phone or something that newer apps won't work on
so they're not displayed?
