It's been decades since I last visited Philadelphia. But the BEST
cheese steak I've ever had was in Philly. A little "Hole-in-the-Wall"
restaurant, the name of which has been lost to time for me.
It did NOT use a cheese sauce. It used actual Provolone cheese.
I've had good ones and bad over the years. But none have compared
to the one I had in Philadelphia.
I wish more places served good cheese steaks. While I wouldn't
eat the bread, the rest is acceptable.

I went to John's Roast Pork, which was a little hole in the wall on

I remember going into a Johnny Rockets and ordering one, and it had no
cheese on it. I wrote to the company and explained to them that if
you're going to call it a cheese steak, it's got to have at LEAST two
things-- cheese, and steak. Their reply-- "Maybe the cheese soaked
into the bread."

Some people should not be making cheese steaks, but leaving it for the
professionals.

And as far as cheese goes, this simply doesn't look appetizing to me
