Using large 2 10" round flour tortillas. Oaxaca cheese along with some
crumbled pepperjack. Cooked on the stovetop in a skillet with a bit of
hot butter until the cheese is starting to melt and one side of the
tortilla is lightly browned. Turn using a wide spatula and cook until
the other side is lightly browned and the cheese is nicely melted.
Remove the skillet from the heat. Remove the quesadilla to a board, let
it set a minute then cut it into triangles (kind of like slicing a small
round pizza).

If you feel like adding salsa or pico or other sauces, feel free.

I'm not sure what dinner will be tonight, but I am hungry. I'll scrounge
around the kitchen in a little while and see what I come with. Taking
something out of the freezer yesterday would have been a wise decision.

Biden claims he commuted over collapsed Baltimore Key Bridge by train ‘many times’ – but it doesn’t have any rail lines

President Biden on Tuesday was fact-checked by social media users after claiming that he’s commuted over Baltimore’s Francis Scott Key Bridge “many, many times … either on a train or by car.”

Numerous people on X noted that the bridge, which fell into the Patapsco River early Tuesday morning after being struck by a massive cargo ship, has never had rail lines attached to it.

“At about 1:30 [a.m.], a container ship struck the Francis Scott Key Bridge, which I’ve been over many, many times commuting from the state of Delaware either on a train or by car,” Biden said in his first public remarks on the catastrophe.

“I’ve been to Baltimore Harbor many times,” he added. “And the bridge collapsed, sending several people and vehicles into the water — into the river.”

Biden, who claims to have traveled over one million miles aboard Amtrak over the course of his 36 years in the Senate and 8 years as vice president, was skewered for “inserting himself” into yet another tragedy.

“Ummm…what train tracks is he referencing? Because there are none on the Francis Scott Key bridge,” radio talk show host Alan Sanders tweeted.

Biden, the oldest-ever commander-in-chief, has a decades-long propensity for embellishing personal stories.

Several of his misstatements have been related to national disasters.

The president has falsely claimed that he was at Ground Zero the day after the Sept. 11 terrorist attacks – when he states in his own book that he was in Washington, DC, on Sept. 12 – and he’s also erroneously said he “watched” a Pittsburgh bridge collapse when in fact he visited the disaster site hours afterward.

Search and rescue crews are still searching for six people missing after the Baltimore bridge collapse.

The missing are all construction workers from a crew that was patching potholes on the major roadway at the time of the collapse...

I should probably make meatloaf again soon. I like it a lot but it's
not a regular thing. I use a combination of lean ground beef and ground
pork, and oatmeal rather than breadcrumbs. No ketchup slathered on the
top, either.

Hmm. I've not made meatloaf in ages...
I think I'll do that this week - but not as a loaf. I'll use my silicone
muffin pans, and make enough to freeze for later.
I use barley in mine (I'm allergic to oats), mushrooms, onions,
tomatoes, celery.
And no ketchup.
I may add some pulverised ceci/garbanzos, too.

I had a quesadilla for lunch yesterday. No butter in the pan. No
cutting it into triangles. Salsa and lettuce added after it came
off the heat.

Dinner tonight... the wife made delicious egg sandwiches. The base was
spelt bread fried in oil and garlic, with avocado, scrambled eggs and
fried onions on top.

I suggested adding bacon but got the evil eye. Still good though! ;)

maintain overall focus. No one has ever changed the political slant of
anyone so posting that stuff just interferes.
