IKWYM, but their criterion seems to be that they can wander over an
out-of-doors area, however sterile, not that the hens can gain access to
food and other nutrients - it seems to be a welfare thang, not aimed at
product quality.

The ones I get here in French and Swiss supermarkets do taste somewhat
different and we generally favour the brown ones for most things. Raw
in salads small white button ones are better, IMO, but for cooking
with a steak, for example, the chestnut ones are much better.

better than white ones. I confess to being surprised at how
predominant white one seem to be in the UK, having made a few trips
over there recently, but never thought they were in any way inferior.

As a child in the fifties I was always told the brown ones were better
for me. No idea why or even if its true.

Brown shelled eggs are preferred because they look less peely-wally than
white shelled ones. Inside, they are identical in nutritive value.

In the 1950s (IIRC) an experiment was made, where a batch of white eggs
was divided, half of them were then dyed brown. Most people stated that
the flavour of the brown ones was superior to the white ones.

We only seem to see mostly brown chicken eggs, even from the scrawny kampong
chickens. Duck eggs only seem to be white, mostly used for salted eggs[1] albeit
I have made salted egg with chicken eggs.

Interesting, but not for me as I am egg-intolerant - I couldn't keep
down when boiled, fried, scrambled, coddled etc, but I can manage one
egg in (say) a batch of pancakes.

Two eggs, and I get turned inside-out. The strange thing is that I ate
them quite happily until I was 13, and suddenly - puke!

But, interesting. When I was 6 I had a pair of Khaki Campbells and their
eggshells were pale blue.
