Why not buy them? The difference in a recipe is so small you won't see
the difference. It is .25 per egg. They are one of the better values
at BJs the way they are packed and fit in the fridge.

Medium eggs must be a minimum of 21 ounces per dozen.
Large eggs must be a minimum of 24 ounces per dozen.
Extra-large eggs must be a minimum of 27 ounces per dozen.
Jumbo eggs must be a minimum of 30 ounces per dozen.

I haven't noticed any difference in the taste of mainland eggs vs local eggs. The local eggs do look nicer color-wise. I made loco moco tonight. The great thing about this Hawaiian dish is that it can be made anywhere in the United States. That's a very good thing.

I don't bake. Egg size doesn't matter.

XL seems to suit us best. Two XL eggs are plenty; I usually scramble,
although a few times a year I boil. My husband likes over easy.

My wife prefers Jumbo eggs but it is because she likes boiled eggs and
timing the desired texture is affected by the size.

With scrambled, sometimes plain, sometimes with cheese, other times with
dried toasted onions. May even put a shot of ketchup on them.

At least once a week, I boil four eggs, 2 soft today, 2 left in the pan
for hard the next day.

When I make "over easy" I don't flip them. Instead, I put a lid on the
pan and it cooks the top snot perfectly. Enough butter so they slide
from pan to plate easily.

That's what my wife does. She cooks at least 4, has two of them soft
boiled and the rest sit to be hard boiled.

I prefer them the way you do them. I don't do eggs over because I like
the runny yolk. My most common egg meal is with spinach. I put some
butter in the pan and wilt some spinach. Then I pour in the eggs that
have been been with a bit of Trinidad hot sauce and scramble them.

I recommend inexpensive vegetable oil when sauteing kale and enough oil
to make sure it doesn't stick at all. When it's cooked it will slide
easily into the garbage can.

I just get the large eggs - the really big eggs seems unnatural to me. Most of the eggs in the market are just large anyway. My dad's in-laws owned a papaya farm and used to give him some off-grade fruits. Those things were scary-large. It tasted the same. Scary-large papayas are a good thing.

Since stating the price of eggs at Walmart and Kroger on Tuesday the price
for one dozen jumbos have dropped to $2.82 at Wally World while the price
has remained the same at Kroger.

Aldi's cage free CA SEFS Compliant large eggs were $4.19 per dozen.
Aldi's low price large egss were $2.33 per dozen.
Aldi usually has the lowest egg prices in town and we didn't look any
place else.

It's not unusual for eggs to be different sizes. It's many a function of
age of the layer. FWIW my next door neighbour started raising chickens
last year and have been selling eggs. When they first started laying the
eggs were mostly small. Now they are mostly extra large. Curiously,
they vary in colour. Most of them are ecru, but every once in a while a
couple of them will be pale green or pale blue.

You're certainly right about that. Here's a large market egg next to a wild feral egg. Those wild chickens aren't up to snuff next to professional layer hens. That's amateurs for you - clearly inferior!

Thanks. I've just put kale on my shopping list. I'll saute it in
good olive oil with some garlic and put it in my mouth.

i eat a couple bunches of it every week with spinach in salads sometimes
with a little romaine or iceberg lettuce.

I should make too much of kale because the times I have had the it I
didn't mind it at all. Swiss Chard OTOH was horrible. I had an open mind
and gave it an honest try, but it was nasty.

Thanks, I've always had some reservations about preparing kale. It always seemed to come out nasty. I'm going to try out your recipe straightaway!
