There's not much wrong with kale. You just have to know how to use it.

I have bought eggs at Aldi in the past, but their large eggs are the at the lowest
weight for that size and still can be sold as large. Place a jumbo egg next to
their large size and you'd swear that Aldi egg was a medium egg.

It's a family favourite here.
Also - if you grow your own, like leaf lettuce, you can just pick the
leaves you need, and the plant will continue to produce, rather than
harvesting an entire head.

It looked pretty on the compost heap.

We do like kale, though.

i cut it off the stalks, coarsely chiffonade and toss it in a bowl. once
in a while we'll use it in cooking. my wife doesn't care much for it but
doesn't have any hate for it either, she'll eat it but not raw like i do.
collard greens she hates. no matter how it is prepared she'd rather it
get tossed in the compost pile. i love it, is more for me. :)

I have had beet tops in mixed greens. They have a distinct flavour,
beet-like but not too strong. Chard is in the beet family but not the
same as beets. The Swiss Chard I had was just plain nasty. It was
disappointing because it looked so nice and colourful.

I have seen squid luau made with kale instead of taro (luau) leaves. I'll have to try it. Mostly you boil kale in coconut milk. The funny thing about squid luau made with kale is that it contains neither squid nor luau leaves.. More properly, it should be called octopus kale.

That may not be potatos and sausage. My grandmother used to use the
expression "cold kale and calf shit" when I asked her what was for
supper.

I don't think much about
the price of eggs, it's easy for me, my father is a farmer. And I get
the eggs for free. It's so convenient for me, I always have eggs at my
fingertips.
