a pretty simple meal (and even better that i did not
have to make it). :)

salmon was from canned red sockeye, used some of the juice
along with chopped onions and some crushed cereal, no other
binder, baked until browned.

veggies had butter, nothing else, microwaved, a little
overcooked but i et them anyways.

I've never made salmon patties. Beats me why that is. The last time I opened a can of salmon, was probably in high school. I'll make it the next time I see a can of the fish.

That sounds awful. I have made ahi cakes though. They're delicious.

I love good salmon patties and that's something I haven't cooked in several
months. There's a few cans in my larder so that's a meal to consider in a
few days. Thanks for the reminder!

I put a bit of cornmeal in mine and an egg as the binders. Generally, a good
shake of lemon pepper as well. I've never heard of them being baked, always
fried, but that sounds interesting.

You can get fresh salmon for a very reasonable
price at ALDI. Why would you want to eat that
cat food? ALDI, 615 Gallatin Ave, Nashville, TN

Seriously. You're not poor. IIRC, songbird lives
in some rural shithole, so he uses the canned
stuff, but you live in civilization.

Yabbut are those patties?

Yes, that's a patty.

Don't underestimate the humble mackerel patty, though! More flavour
than salmon patties.

Cornmeal seems to be a recurring American thing. I'd never have
thought of adding that.

Pink salmon works just fine. I have several cans in the pantry.

I do drain it (the "juice" in canned salmon is salty water) and then
mash the canned salmon in a mixing bowl with a fork. I don't know what
songbird means by "crushed cereal".

I don't recall using cornmeal but may have to give it a try next time!
Never leave out the egg. Generally, I either add seasoned flour or,
occasionally like my mother did, crushed fritos-type corn chips. (That's
from the way-back machine.)

I have actually tried baking them, years ago on a baking sheet brushed
with oil, turning them once during the baking process. It can be done
but they didn't have the same great taste as salmon patties pan-fried in
a little bit of oil on the stovetop. :)

I've never noticed canned mackerel in stores before. Mackerel patties are probably okay but I've never heard of such a dish. In the US, most people buy canned tuna or salmon. I'll look to see if there's any canned mackerel in the store. I won't buy any but knowing that it exists is the first step.

It works great as a binder. Songbird used cereal, crushed I'm sure; some people use
crushed crackers. Cornmeal might be a regional thing.

I like pink salmon fine. It also comes in those small tuna can size so a single

I'm going to guess he used plain crushed corn flakes. Some use them as a
coating for fried chicken which works exceptionally well.

Cornmeal would probably give the same results as crushed corn chips.

Maybe I'm wrong, but I'd think the fried version would be just a bit quicker
than baking.

I still have no clue why Bruce seems to think corn (in any form) is a
bad thing.
