They were in the habit of locking down the roof hatches before
going home?

Easy enough to start a controlled fire on a roof with 220v and
30-50 amps at your disposal. And if there's AC, there's water
too. Kinda hard to die on a roof in less than 48 hours. He
probably had tools to bring up the flashings around a hatch or
into a vent to get through the ceiling.......

I'd rather give the Walmart people the $.05 than the Penzey guy
(or anybody) $8.00 of pure markup.

I grocery shop on value, quality, and taste - not on "principles".
You could also spend less than $3 for the same stuff at any other
local grocer of your choosing. $9 for a half a cup of dirt cheap
Italian seasoning is just plain dumb.

I never tried lamb until my early 60s.
It was definitely "love at first bite."
Seasoned and cooked the same as I do for a medium rare rib-eye.

I had it once when I was a kid and disliked it. My mother loved lamb but
my father hated it, so she made it one time when Dad was away on
business. My dislike of it may have been due to the fact that my mother
always cooked red meat until it was grey. When I dated my wife she
grilled lamb jobs on a Hibachi and I was instantly converted, and those
were just shoulder chops. I stuck to shoulder chops because they were
so much cheaper than loin chops, but after having loin chops a few times
I changed my tune and was willing to spend the extra because the loin
chops were so much better.

I always have my eye out for deals on racks of lamb. They are a little
trickier to cook than chops, but when cooked to a nice medium rare they
are incredible.

What they do donate (pepper) is jacked up 3X.

It's in practically all of the, It's in my current batch from the
bulk section at HEB. Plus I have standalone fennel. A lot of
people don't like it and don't want it in their Italian seasoning.

And that hardly makes it worth another $7. Fennel is dirt cheap,
too.

The kitchen was a true large professionally equipped kitchen with a staff of about
15 people or so. They fed about 2,000 people a day, but I suspect the lamb was
bad when it was delivered.

Not me. I've killed and seen killed countless animals and
enjoyed eating them.

I've caught and killed fish, raised our own sheep,
chickens and ducks; always killed the poultry myself and
led my sheep into the licensed slaughterhouse to make sure
they got slaughtered with no delay (ensures tenderest
meat).

I'm very particular about the way my meat is bred,
raised, lived, fed and died; highest welfare standards
make the best tasting meat/eggs.
